Baked Flounder with Almonds
A light and delicious fish recipe that’s easy to prepare and cook. My husband is an avid fisherman and he use to fish for flounder in the Great South Bay off of Long Island. I made this recipe for him as I know he loves fish.
Ingredients
- 4 Flounder fillets (fish must be thawed)
- 1/4 tsp salt
- 1/4 tsp pepper
- Juice from 2 limes
- 1 garlic clove crushed
- 1/8 cup olive oil
- 1/4 cup sliced almonds
- 1 tbsp butter (I use fat free)
Directions
- Preheat oven to 425 degrees.
- Put fish in a shallow baking dish.
- Season with salt and pepper.
- Blend together lime juice, garlic and oil.
- Brush on each piece of fish.
- Bake in oven 8-10 minutes.
- Baste fish with lime juice mixture several times while cooking.
- Sauté the almonds in the butter until golden brown.
- Fish is cooked when it becomes opaque, and flakes easily with a fork.
- Serve each piece of fish with some almonds sprinkled on top.

This looks so yummy! I wonder, how well do the flavors used here work with other types of fish? I can obviously experiment myself, but I’m wondering if you can give any advice?
