Bruschetta Recipe

One of my favorite Italian appetizers is Bruschetta and this recipe will sure have you going back for more. This appetizer goes great before a hearty pasta dish or any Italian main course.

Ingredients

  • 1 pkg vine ripened small tomatoes (finely chopped) or 6-7 plum tomatoes (scoop out seeds and finely chop)
  • 2-3 garlic cloves (minced)
  • 5-6 fresh basil leaves (finely chopped)
  • 1-2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1 French style baguette

Directions

  • In a bowl mix the tomatoes, garlic, olive oil and balsamic.
  • Add in the basil and salt and pepper to taste.
  • Slice bread diagonally about 1/2 an inch thick.
  • Brush one side of the baguette slices with some olive oil.
  • Lay on a cookie sheet with olive oil side down.
  • Preheat oven to 450 degrees.
  • When oven is preheated cook the baguette slices on the top rack of the oven for 5-6 minutes.
  • Spoon some of the tomato mixture on each slice of bread and serve.
  • Add a sprinkle of shredded Parmesan cheese.
