Bruschetta Recipe
One of my favorite Italian appetizers is Bruschetta and this recipe will sure have you going back for more. This appetizer goes great before a hearty pasta dish or any Italian main course.
Ingredients
- 1 pkg vine ripened small tomatoes (finely chopped) or 6-7 plum tomatoes (scoop out seeds and finely chop)
- 2-3 garlic cloves (minced)
- 5-6 fresh basil leaves (finely chopped)
- 1-2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 1 French style baguette
Directions
- In a bowl mix the tomatoes, garlic, olive oil and balsamic.
- Add in the basil and salt and pepper to taste.
- Slice bread diagonally about 1/2 an inch thick.
- Brush one side of the baguette slices with some olive oil.
- Lay on a cookie sheet with olive oil side down.
- Preheat oven to 450 degrees.
- When oven is preheated cook the baguette slices on the top rack of the oven for 5-6 minutes.
- Spoon some of the tomato mixture on each slice of bread and serve.
- Add a sprinkle of shredded Parmesan cheese.
