This is a very easy recipe and one that will amaze your guests. It’s tasty and goes well with red meats. You can reduce the calories for this side dish by using reduced fat or 2% skim Cheddar Cheese. You can also use fat fee sour cream to reduce even more calories.

Ingredients

  • 5-7 medium sized Idaho or baking Potatoes
  • One 16 oz light or fat free Sour cream
  • One 8 oz reduced fat Sharp or medium Sharp Cheddar Cheese
  • 1/4 cup Parmesan Cheese (Grated)
  • Salt & Pepper to taste
  • 1 tbsp. Garlic powder
  • 1 small to medium yellow onion (Finely chopped)
  • Splash of milk (Use skim to reduce calories and fat)

Directions

  • Boil Potatoes with skins on until there almost done, you want them to be hard in the center.
  • Drain and run cold water over Potatoes to cool.
  • Peel skins off.
  • Shred Potatoes with cheese grater in a large bowl.
  • Chop onion in a food processor if you have one.
  • Shred your cheddar cheese.
  • Add onions and shredded cheddar cheese to Potatoes.
  • Add 1/4 cup of Parmesan cheese and sour cream.
  • Add Garlic, Salt & Pepper to taste and mix.
  • Add a splash of skim milk and mix well.
  • Put in baking dish and spread out evenly.
  • Cover with foil and bake at 325 to 350 degrees for about 45 minutes to 1 hour.
  • Remove foil the last 6 minutes to brown top (if you want).

All ingredients can be reduced or add more depending on how much or how little you wan to make. 5-7 Potatoes will serve about 6 people. I usually make this when we have company or if I want leftovers.
