Chicken and Rice Casserole
This Chicken & Rice Casserole Recipe is very delicious and easy to prepare. We only use boneless chicken breast without the rib meat to reduce the calories and fat.
Ingredients
- 4-5 Skinless Boneless Chicken Breasts if they are big pieces, use 3-4 and cut in halves
- 1 can Broccoli & Cheese soup
- 1 can Cream of Mushroom soup
- 1 cup rice
- 1 1/2 of cups of chicken broth
- 2 cups fresh or frozen Broccoli
- Salt, Pepper, and Garlic powder to taste
Directions
- Preheat oven to 375 degrees.
- Mix all ingredients, except chicken.
- Rinse chicken and pat dry with paper towels.
- Put chicken on top of rice mixture. You can salt, pepper and garlic powder the chicken.
- Cover with a lid and bake for 1 hour.
- Take out and let set for 5-10 minutes and serve.
Serves 4 to 6 adults.

This looks like a rocking recipe! I tried making one but without the cheese soup. Adding the cheese soup could add up to the flavors of this dish. Thank you for sharing!
