Fire Cracker Chicken
This Fire Cracker Chicken is a bit on the hot side, but not too hot. It’s spicy, but has a lot of flavor. If you like spicy food on the medium scale like hot wings, than this one is the perfect temperature. The Mango flavor compliments this recipe very well.
Ingredients
- 4 boneless skinless chicken breasts
- 4 cloves of garlic, peeled
- 1 tbsp Kosher salt
- 1/2 cup extra virgin olive oil
- 2 tsp crushed red pepper
- 1 cup Balsamic vinegar
- 3-4 ripe mangos peeled and cut into chunks
- 1 medium red onion quartered
- 1/2 tsp thyme
Directions
- Smash garlic cloves and sprinkle with 1 tsp of the salt.
- Smash together into a coarse paste and put in a small bowl and add in olive oil, and remaining 2 tsp salt, thyme and crushed red pepper.
- Mix well.
- Brush the mixture on the chicken, and set aside.
- If you use wooden skewers you will need to soak them in water for about 30 minutes before grilling with them.
- Cook the chicken on the barbecue or in a broiler until fully cooked and set aside.
- Skewer an onion wedge then a piece of mango, then a piece of onion wedge, and a piece of mango until you have them all on skewers.
- Cook on a barbecue or in a broiler until they are soft, but not mushy.
- In a small sauce pan cook the balsamic vinegar until it reduces and is syrupy.
- Serve a piece of chicken with a mango, onion skewer.
- Drizzle some of the balsamic over the chicken, mango and onion skewer and serve.
