Garlic Mashed Potatoes

This is one of my husband’s favorite side dishes. He loves to mix his corn together with the mash potatoes. This recipe is easy to make and it goes great with steak, meatloaf and chicken.

Ingredients

  • 1 to 2 lbs of Small Red Potatoes (Depends on how many people you’re serving)
  • 3 to 4 Garlic Cloves
  • 2 tbsp Fat Free Butter
  • 1/4 cup of Milk
  • Salt and Pepper
  • 1 tbsp of Parmesan Cheese (Optional)

Directions

  • Wash and cut Red Potatoes into quarters, but keep skins on.
  • Boil potatoes along with 3 to 4 Garlic cloves.
  • Add a little salt to water.
  • Boil potatoes in water until soft.
  • Strain potatoes when done.
  • Put potatoes in mixing bowl.
  • Add the garlic cloves you boiled in mixing bowl.
  • Add Milk and Butter in mixing bowl.
  • Add Parmesan cheese.
  • Add salt & pepper to taste.
  • Mix all ingredients together using a mixer until potatoes are creamy or to your liking.

The trick to Garlic Mashed Potatoes is to boil the garlic in the water with the potatoes then drain and mash garlic with potatoes in the mixing bowl.

Enjoy!
