Italian Stuffed Artichokes
I love Stuffed Artichokes and my mom would be the first to agree. The only problem is we only make them for Thanksgiving. Not any more! We made these for Easter Sunday to go along with our Turkey and they were awesome! This is an old Italian family recipe that my husband enjoyed for a long time.
Ingredients
- 3 medium to large artichokes
- 2 tsp parsley
- 1/2 – 1 cup Italian style bread crumbs (depending on how many artichokes you make)
- 2 cloves of garlic per artichoke (minced)
- Pepper to taste
Directions
- Mix all of these ingredients in a bowl.
- Cut the tips of all the leaves on artichokes to remove the thorns.
- Hit the butte side of artichoke against the sink to open it up and spread open the leaves with your hands.
- Stuff the breadcrumb mixture in between all of the leaves, drizzle olive oil in between leaves.
- Boil the artichokes in water; water needs to be about 1/3 of the way up on the artichokes.
- Cover and boil for 1 1/2 to 2 hours.
- The artichokes are done when the leaves pull off easily.
- If the water boils down add more.
