Peach Cobbler Recipe
If you have a sweet tooth and or love desserts, you will really enjoy this Peach Cobbler Recipe. It goes really well with your favorite ice cream and a glass of cold milk.
Ingredients
- 7-8 (about 6 cups) fresh peaches peeled and sliced
- 1 cup sugar (I use 1/2 a cup of splenda to reduce calories)
- 3 tbsp cornstarch
- 3/4 tsp ground nutmeg
- 3/4 tsp vanilla 1 1/2 tbsp lemon juice
- 1 1/2 tbsp butter or margarine
Directions
- In a large bowl combine dry ingredients mix well add vanilla lemon juice and butter mix all ingredients together well.
- Put all ingredients in a 1 1/2 quart baking dish and set aside to add dough on top.
- Preheat oven to 450 degrees.
- For the dough on top you will need:
In a bowl sift together;
1 cup all purpose flour
1 tsp baking powder
1/4 tsp of salt
- Using two knives or a (food processor if you have the dough blades).
- Cut in 2 1/2 tbsp each of solid vegetable shortening and firm butter until mixture resembles coarse meal.
- Pour in 1/3 cup cold water and stir with a fork until dough clings to sides of bowl.
- If dough is too wet, add more flour a little at a time until dough is the right consistency.
- When you roll out your dough put some flour on counter where you’re going to roll your dough. This will help to keep the dough from sticking to the counter.
- You want to roll your dough to about 1/2 an inch thick to be placed on top of peach mixture.
- Cut the dough in the shape of the baking dish, but don’t let the dough fold over the sides.
- Brush dough with milk and sprinkle with sugar.
- Bake for 10 minutes and reduce oven heat to 400 degrees and continue to bake until fruit is bubbly and biscuits are browned.
- Let set for at least 5-10 minutes and serve warm with ice cream.
It goes great with ice cream!
