Potato Salad Recipe
Potato Salad goes well with many foods, but even better with meats cooked on a barbecue. This recipe goes well with steak, hamburgers, hot dogs, chicken, pork and Italian sausage. It’s the perfect summer time side dish. This is a low fat potato salad recipe when using Hellmann’s light mayonnaise.
Ingredients
- 5-7 potatoes depending on how big the potato (you can use red or brown potatoes)
- 1 small yellow onion
- Radishes (1 per potato)
- Celery (3 pieces chopped)
- 2-3 eggs (hard boiled)
- 1/4 to 1/2 cup of Hellmann’s real mayonnaise or low fat (Add more depending on how creamy you like it)
Directions
- Boil potatoes with the skins on (it keeps the potatoes from absorbing to much water).
- When potatoes are soft they are done.
- Let cool then peel potatoes.
- Cut in small chunks.
- Finely chop onion, celery, radishes, and eggs.
- Add to potatoes; add mayo, salt, pepper, and garlic powder to taste.
- Let chill for minimum of one hour to let ingredients marry.
Serve as a side dish or by itself.
