Shrimp Scampi Recipe
This Shrimp Scampi recipe is slightly modified to reduce calories and fat without sacrificing taste. Shrimp Scampi goes well by itself or over your favorite pasta. I prefer serving Shrimp Scampi over angel hair or linguine pasta.
Ingredients
• 1/2 to 1 lb of Large Shrimp (Colossal preferred)
• 1 lb of DreamField Pasta (angel hair or linguine preferred)
• 1/4 stick of real butter and 1/3 of a cup of Parkay Fat Free butter
• 1 tsp of olive oil
• 1 tsp of oregano
• 2 garlic cloves
• 1 tsp black pepper
• 1 tsp white pepper
• A couple of chopped up basil leaves
• Grated Pecorino cheese
Directions
• Using a large casserole bowl coat the bottom with butter and olive oil.
• Add 2 garlic cloves chopped.
• Place Shrimp in bowl.
• Add oregano.
• Add black and white pepper.
• Add chopped basil leaves.
• Preheat oven to 375 degrees.
• Cover casserole bowl and cook for 20 minutes.
• Remove cover after 15 minutes.
• Serve over pasta or by itself
• Add grated Pecorino cheese if serving over pasta.
