Taco Salad Recipe

This south of the border Taco Salad Recipe taste incredible and it’s easy to prepare. You can serve this recipe as a side or as a main dish.

Ingredients

  • 4 boneless skinless chicken breast (you can use more or less depending on how many people your serving)
  • 1 package taco seasoning
  • Caesar dressing
  • 1 small can sliced black olives
  • 1 head lettuce (I use romaine)
  • 1/2 or less of an onion (I use a red onion)
  • 1/3-1/2 cup shredded cheddar cheese (depending on how much you prefer)
  • 1 tomato cut into small quarters
  • 1 small  bag nacho cheese Doritos (or the next larger size if you prefer more)
  • 1 cup water
  • Garlic powder to taste

Directions

  • Rinse chicken and put in a Crockpot or slow cooker.
  • Mix taco seasoning with 1 cup of water and pour over chicken.
  • Sprinkle with garlic powder.
  • Cover and cook on high for 3-4 hours.
  • When chicken is fully cooked.
  • Make your salad with the rest of the ingredients.
  • You want to crush the Doritos before adding them to the salad.
  • Add enough of the Caesar dressing to taste (don’t drowned your salad).
  • Mix salad well.
  • Remove chicken from Crockpot place on a cutting board and pull apart (shred) with a fork.
  • Spoon some salad in a bowl and place some chicken on top and serve.

You can also use ground beef (95% lean) by applying the same ingredients, but cook it according to the directions on the package of the taco seasoning.

You can also cook the chicken the same way to make tacos.

    Really this salad can be a main dish, it has everything.

    Although I love beef, I think that this chicken version is more delightful :)

    I am newly a vegetarian. Do you have vegetarian alternative for this mexican recipe?
