Victoria’s Hummus Recipe

Hummus goes great with chips, crackers and a variety of vegetables. It’s a great snack for anytime of the year. Chickpeas are a helpful source of zinc, folate and protein. They are also very high in dietary fiber.

Hummus Recipe

Ingredients

  • 1/8 cup fresh Italian parsley (Optional)
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon kosher salt
  • 3 garlic cloves
  • 2 cans (15 1/2 ounces) Chickpeas
  • 2-3 tablespoon Tahini
  • 1/2 to a one whole fresh lemon juice depending on your taste
  • 2-3 tablespoons extra virgin olive oil

Directions

  • In food processor mix parsley, lemon zest, salt, and garlic together about 6 seconds.
  • Scrape bowl and repeat.
  • Add remaining ingredients and process until smooth about 1 minute.
  • Scrape bowl and process again to fully incorporate all ingredients.
  • Serve and enjoy!

Makes approximately 1 cup.

    ooo this looks GOOD! Looks very much like my favorite hummus recipe used by a Turkish Restaurant in Spring Hill Tennessee called “Sultan Table”. Btw…homemade hummus goes fabulously with fresh tabouli.
